Game-changer: Waffled Caprese Omelette

So I’m going on day 3 of my completely b.s. weeklong Instagram comment + caption block. If the FBI is looking for new torture tactics, I think they should strongly consider unprovoked Instagram blocks. It’s excruciating, the social-media equivalent of being denied by the soup nazi. No warning, no explanation, no rhyme or reason, simply “NO captions for you!”. Rest assured though, come Thursday, I’ll be right back to my regularly scheduled captioning.

So this totally looks like a waffle sammie. But it’s not. No, this, my friends, is an omelette. Made in the waffle maker. Yeah that’s right. Didn’t even know you could do that, did you?? Well, you can. And it blows your world wide. freaking. open. No more setting out to make an omelette and defaulting to a scramble when things don’t quite go as planned. This turns out perfect. every. single. time.

And this combo?? Insane. Oozing (I love anything that oozes) burrata; sweet, fresh grape tomatoes; crisp spinach and herby basil. Money.

Instructions
  1. First, heat up your waffle iron, get it niiiiiice and hot.
  2. Mix a pinch of herbed sea salt into the beaten eggs, then pour 'em into the waffle iron. Close the lid. Just trust me.
  3. When it's done, use a fork to remove it from the waffle iron and lay the burrata, spinach and tomatoes down on one half of the omelette. Top it off with the basil and stuff. yo. face.
