To make the taco meat, heat the avocado oil in a skillet over medium heat, then brown the ground beef + stir in the spices. Remove to a plate + set aside.
To make the omelette, add the butter to the skillet + pour in the eggs, cooking a couple minutes, until set, tilting every so often to distribute any runny egg to the edges. Fill with ground beef + bell peppers + cheddar + fold in half.
To make the avocado salsa, combine all the ingredients in a mini food processor until smooth-ish. Spoon on top of the omelette + top it off with a dollop of greek yogurt + fresh cilantro.
