Street Tacos
These tacos are one of my all-time faves, a super delish reminder of one of my very first off-the-cuff adult adventures. Thanks to the crockpot, hands-on prep is pretty minimal.

  1. For the chicken, line the bottom of a crockpot with the roughly chopped onion, then add the chicken and garlic. Mix the chili powder, cumin, smoked paprika, sea salt and black pepper and sprinkle over the chicken. Cook on low for 7-8 hours (recommended) or high for 4 hours.
  2. When the chicken is fully cooked, use two forks to shred it.
  3. If using pre-made tortillas, reheat them by throwing them onto a hot griddle for a few seconds on each side.
  4. To serve, spoon some chicken into each tortilla and top with a little diced onion and chopped cilantro.
  5. Enjoy the taste-bud fiesta.
