As meals go, lunch is usually the one that receives the least amount of thought, time or attention. It’s smack-dab in the middle of the day, so I’m usually working or mid-project of some sort, and I’ve got at least one kid home to attend to, so I need something quick and healthy and relatively effortless to toss down the piehole before resuming my work and mama duties. So lunch is often leftovers and/or a bunch of different things from the fridge tossed together in a bowl. Like this.
