Key Lime Pie Smoothie (minus those pesky key limes)

When I was in college, I dated a guy who loooooved key lime pie. So naturally, wanting to impress him with my premature homemaking skills, I felt compelled to make key lime pie. From scratch, of course. That would really seal the deal. Helloooooooooooo, wife material.

Only, it turns out that making key lime pie from scratch is kind of a pain in the ass. Have you ever tried to juice a key lime?? It’s like God was playing a cruel joke on us when he created key limes, like he wanted to watch us squirm. I firmly believe it was the first thing he created after Eve took a bite of that damn apple. He was super pissed and sent the key lime as retribution. They’re tiny and hard and maddeningly devoid of juice. And for the life of me, I can’t even really tell the difference between a key lime and a regular, non-evil lime. So, word to the wise: if you’re trying to impress a key-lime-pie-lover of your very own – just make this smoothie instead. You can thank me later.

Y’all. This smoothie. is insane. It tastes just like key lime pie. Annnnnnnnnnd it’s not packin’ all the refined sugar and cream. Know what it is packin’?? Spinach. Lots of it. But you’ll never even notice. Because you’ll be too busy slurping up alllllll the deliciousness as you marvel at the fact that not even ONE key lime was arduously squeezed in the making of this smoothie.

The slight tang of the frosty, smooth lime-tinged base…the cool, creamy vanilla-bean-bespeckled greek yogurt layers…the buttery, toasted graham cracker crumbs. It’s key lime perfection. No key limes required.

Key Lime Pie Smoothie
A healthy green smoothie that tastes like pie?? Sold.
Instructions
  1. To make graham cracker crumbs:
  2. In a small skillet over medium heat, melt butter, cooking until browned. Crush graham cracker into crumbs (I stuck it in a bowl and mashed on it with the end of the wooden handle of a spatula) and add to the pan, stirring to coat all the crumbs with the butter. Cook a minute or two, until crumbs are toasty. Remove from heat and set aside.
  3. To make creamy layer:
  4. Mix greek yogurt and maple syrup and vanilla-bean paste (or vanilla extract) until fully combined.
  5. To make smoothie:
  6. In a blender, blend cashew milk, lime juice, vanilla extract, spinach, maple syrup, chia seeds, banana and ice until smooth, about 90 seconds or so, depending on your blender.
  7. To serve:
  8. Layer smoothie and greek yogurt and top with graham cracker crumbs.
