My boys love smoothies, so I use every smoothie opportunity as a way to try and boost their nutrition for the day, this being one of their absolute faves.
I give you the Greeña Colada, a coconut-forward, island-inspired concoction with fresh, nutrient-rich spinach blended right in. If not for the resultant bright green hue, you’d never even know the spinach was in there. It’s all but undetectable, a smoothie Trojan horse, sneaking iron-loaded greens into unsuspecting sippers. The chia seeds add extra fiber, omega 3s and protein, along with a laundry list of other vitamins and minerals, and the banana and pineapple add smooth, sweet creaminess.
As far as midday snacks go, this one’s pretty stellar.
