So often the obligatory add-on, they’re up against the big boys – roasted chicken, steak, pasta, tacos, casseroles, all typical mains that are usually packin’ the flava thanks to their fat content, because after all, fat = flavor. So how’s a conspicuously fat-free veggie supposed to compete with that?? Here’s how.
I’m always on the lookout for vegg-spiration. Anything that sexes up my veggies, bring it. So when I came across this recipe on the @fitbook Instagram a few years back, I was all over it. These are so incredibly easy to make, and they just so happen to be a family favorite. The only complaint I ever get is that I didn’t make enough. I’m lucky if I even get one living amongst all these grabby dudes.
Rich, tangy goat cheese stuffed into sweet little mini bells, broiled to flame-kissed perfection and topped with fresh basil?? Ummmmm, it doesn’t get much better than that. This is some maaaaajor veggie game that easily rivals those tasty mains.
