Cheddar-Horseradish Cauliflower Mash: For Those Inexplicable Potato-Haters
There is almost no limit to the things I will slather horseradish all over. But cauliflower mash definitely tops that list. Especially when you add bacon and cheese.
Let’s face it: there’s no substitute for potatoes, but this is a good option for anyone who’s craving mashed potatoes, but trying to limit carbs or keep it keto.
A good option for those who don't do potatoes for some inexplicable reason, or just wanna switch up their typical mash.

Ingredients
1headcauliflowercut into florets
3slicesbacon
3/4cupcream
4tbspbutter
2-3tbspprepared horseradish
3/4 cupshredded cheddar cheese
couplepinchessea saltto taste
2scallionssliced
Instructions
Boil a little water in a large pot, just enough to cover the bottom, then put a steamer basket in the pot, fill it with the cauliflower florets and put on the lid. Steam for 4 minutes.
In a large skillet, cook the bacon to your liking, then chop the bacon and set it aside, reserving the fat.
In a food processor, process the steamed cauliflower until it's a mashed consistency, then with the machine running, pour in the cream through the feeder tube.
Put mashed cauliflower into a serving bowl, stir in butter, a drizzle of the bacon fat, the horseradish, the cheese, then season to your liking with the salt. Top with scallions and bacon and serve.
